Step back into the dawn of the American Revolution with actor Jim Knight as he brings Founding Father Patrick Henry to life. Discover the passion, courage and convictions behind the legendary “Give me liberty or give me death!” speech and explore the life of the patriot, lawyer, soldier and governor who helped shape a nation.

Lunch & Learn – Altercare Series: Part 1

Discover what to expect when transitioning to a skilled nursing or rehabilitation facility. Representative Anna Vasserman from Altercare will explain the admissions process, answer common questions and share tips for making the transition as smooth and stress-free as possible. Chickpea & Edamame Salad

This chickpea and edamame salad is light and refreshing. Enjoy it on its own, stuffed in a pita or served as a dip with crackers.

Ingredients

  • 1 15-oz. can chickpeas, rinsed and drained well
  • 1 1/2 cups shelled edamame
  • 1/4 cup finely diced carrots
  • 1/4 cup finely diced bell pepper
  • 1/4 cup dried cranberries
  • 3 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground cumin
  • 1 tablespoon Italian seasoning

Instructions

  1. Combine chickpeas, edamame, carrots, bell peppers and cranberries in a mixing bowl.
  2. Whisk together olive oil, red wine vinegar, garlic powder, salt, black pepper, cumin and Italian seasoning.
  3. Pour the dressing over the chickpea mixture and toss well.
  4. Serve immediately or refrigerate for a few hours or overnight to allow the flavors to blend.

July Highlights

Our Active Older Adults had plenty of fun in July—from creating patriotic crafts and suncatchers to playing Spy Alley and enjoying Parlor Room board games.
